Separate switches, separate server racks - no chance of data mixing (think of the customer A and customer B examples) but requires a lot of wastes switches and physical space .
Use VLANS for same purpose, but can all use the same switch - still can't communicate with each other and would require a router to communicate with each other .
Segment your network with no physical devices at all.

Think of a corporate network with 2 separate physical sites - each site having a VPN concentrator .
Remote access VPNs - like we normally use when working remote at home or a hotel .
All software based VPN - doesn't use a VPN concentrator device .
Just the protocol used to enable VPNs .
